OMG, this is the best carrot cake I have ever made.. Wait a sec, this is the “only” carrot cake I have ever made…. In my life!! LOL I prayed to the Baking Fairies and they came thru for me once again and helped me make this cake so damn good! I don’t know about the cake but my Son-in-Law would go crazy over the frosting…I think it’s now one of his favorites…Pineapple Cream Cheese ….. Yummy!! This cake is perfect for a Birthday party, family get together Hell, even for breakfast. Has fruit in it. LOL Pineapple, homemade applesauce. mmmmmmm
Here’s everything you’ll need to make this moist, decadent, Orgasmic Cake…. 🙂
1 1/4 Cup Unsweetened Apple Sauce, I used my own homemade.
1 1/3 Cup Sugar
2 Cups All-Purpose Flour, sifted
1 tsp. Baking Soda
1 1/4 tsp. Baking Powder
1/2 tsp. Kosher Salt
1 1/8 tsp. Cinnamon
2 + Cups Grated Carrots
1 + tsp. Vanilla Extract
1 1/4 Cup Crushed Pineapple in it own juice, not syrup and not drained.
1 Cup Raisins, optional
Preheat oven to 350 degrees. Line a 13″ x 9″ with parchment paper and spray with pam, set aside.
Sift together your flour, baking soda, baking powder, salt and cinnamon, set aside.
Shred carrots to add up to just a little bit over 2 cups. Place in bowl of your stand mixer.
Add your eggs…
Add your Crushed Pineapple…
Add your Unsweetened Applesauce mix everything together well. Add the flour mixture.
Using the paddle attachment on your stand mixer, mix all ingredients just until incorporated.
Pour batter into your prepared pan. This cake that I made I only put raisins in half of it. I wanted my customer to taste the cake with and without the raisins. See if she liked one better than the other. Raisins won I believe. LOL
So, I pushed the raisins down into the batter than banged the pan on the counter to get any air bubbles out.
Bake for 30 minutes then turn pan around in the oven and bake for an additional 20 to 30 minutes. When the edges are a light golden brown and a toothpick comes out almost clean, your cake is done. Do not bake longer than 60 minutes!! It’s going to come out a bit sticky on top, that’s normal. It “IS”, a Kimmiz Kitchen Kreation after all!! 🙂
Pineapple Cream Cheese Frosting….
16 oz. Philly Cream Cheese, room temperature
7 Tbsp. Unsalted Butter, room temperature
1 tsp. Pure Vanilla Extract
1 Cup Crushed Pineapple, drained
2 -3 Cups Powdered Sugar
Cream together the butter and cream cheese, about 2 minutes, add the vanilla. Now add 2 cups of the powdered sugar and the crushed pineapple. You can add more powdered sugar if need be, totally up to you. 🙂 And that’s it, your finished. Now, stick your finger in the bowl and take a big ole glob of that delicious frosting…. tell me you don’t just love it!!! I knew you would. Frost that cake and stick it in the fridge for about 40 minutes so the frosting can set up a bit….if need be that is.
